Melon Gazpacho with Iberian Ham Redondo Iglesias

1.5 Melon pulp only
1 spring onion
1/2 Green Pepper
White bread from the previous day
Garlic (One clove)
Olive Oil
250 Gr. Of Iberian Ham Redondo Iglesias

Clean the melon by removing the rind and seeds. We cut it into pieces and place it
in a bowl to grind it.
Chop the spring onion and add to grind as well as the green bell pepper.
Add the garlic, oil and vinegar.
We grind it all and check the density to add the white bread. If we
If it is too dense, add more bread.
Pass everything through a chinois and let it cool.
Cut the ham into slices and reserve two per cup. The rest we chop into shavings.
Serve the gazpacho in a bowl or deep dish and place the slices on top.
The ham shavings will serve as a base to place the rest of the ham cut into shavings.
